Located in the heart of Asturias province in the north of Spain, our creamery is nestled on a family farm where we have been producing cheese since 1910. We take pride in being an ecological family creamery, using sustainable practices to care for our cows and the land. We also have our own cows, which allows us to have world-class quality milk and make the best cheese possible.
We are a family-run business with a long-standing tradition of excellence, and we take great care in every step of the cheese-making process. THE MASTERMIND BEHIND OUR PROJECT
Valero Alises, our brilliant chef and innovator, is the mastermind behind our project. He was recruited by Saboré, one of the best restaurants in North Florida, and set off on an American adventure. Among his many culinary accolades, his victory on the popular cooking competition show "Iron Chef" stands out as a shining achievement. It was during this time that Valero discovered a gap in the market for a world-class blue cheese. He saw the opportunity to bring a high-quality product to the American public and shared his vision with the family. Together, we made the decision to pursue this venture and create a cheese that would truly satisfy the American market. Using their expertise and experience, they have crafted a perfect blue cheese that is sure to delight and impress.
